Summer is just around the corner!! I am so SO excited for shorts, tank tops and those late summer nights.  As it is FINALLY starting to warm up, I can ditch the hot soups and warm comfort foods for refreshing, summery eats!  Here is one of my absolutely favorite lunches that is perfect for those hot days.

Purple Pop Greek Bowl

Ingredients

  • 1/2 Cucumber
  • A Handful of Baby Carrots
  • 1/4 Cup Cherry Tomatoes
  • 1/4 Cup Feta Cheese
  • 8 Kalamata Olives
  • 1/2 Tablespoon Olive Oil
  • Salt and Pepper to taste

Chop veggies, put in a bowl, drizzle with olive oil, sprinkle salt and pepper to taste and enjoy! I added a gluten free tortilla with 2 tablespoons of hummus on the side.
